let's see.

there's the tac command.  always fun.  if you play with text a lot,
it's good to know about cut, paste and join.

*some* people i know are big fans of xargs, and of course sed and
awk just can't be played with enough.

a nice utility for diskusage: xdu.  it's also one of the only x
programs i know that uses pipes: du|xdu.  redhat users will need
to score it from a contrib site.  debian's got 2000+ packages
so i hope it's one.
