Sorry to be answering my own question - should have looked a bit
harder first!

Patching the kernel doesn't solve the problem of installing onto the
hard-drives. To do this, you need to pass parameters to the kernel which
will allow it to use the UDMA66 controller. The UDMA HOW-TO has all the
details.
