 That's nothing to do with gnome. It's your window manager. More recent
window managers usually default to not creating icons for hidden windows.
You should be able to get up a window list somehow. What window manager
are you using ? middle-clicking on the desktop backdrop should bring up a
menu of window-manager specific things. "Windows" may be one of them.

 Evolution isn't finished yet, so Mutt is still the best, though it's a
terminal application, not a GNOME one.
