had similar weird problems with pine over nfs aswell. 

in addition to compiling pine with locking support and make sure
rpc.lockd and rpc.statd are running on both server/client. eg from
rpcinfo -p you should see program 100024 (status from RH services)
and 100021 (nlockmgr in RH / possibly something like NLM on other
unices).

in the worst case, try tuning attribute caching timeouts (mount -o
actime=<sec>. Defaults are pretty high, something lower'd be better
for mail, eg  5 down to 2. Last resort, disable it with -o noac.
