Well, an example would be useful. I never had any problems with headers
from this list.

This sounds like you should switch to a different mail system ...
I don't even want to know what fragile mail software you're using.
As far as smtp is concerned, email headers are part of the message DATA.
Other than adding Received:, Message-Id: or custom X-*** headers, or
canonical address rewriting, mail transport software doesn't need to
care about headers.
