In addition to the comments about consistency in formatting and ease of
formatting, there's another reason I like to use LaTeX:  it produces really
pretty output.  The attention to detail in the printed output that LaTeX
generates is quite astounding.  It carefully uses the top of the "f" as the
dot for the "i" in "if".  It worries about spacing between letters just to
produce a smooth and even look from a distance, rather than patches of dark
and light on the page.  It hyphenates correctly.  It just generally looks
really good.  It looks more like something a professional typesetter might
produce.

And the other reason is pdflatex.  It generates very nice PDF files for you
:-).  (Actually, you can generate a lot of different formats from LaTeX,
but PDF is the most useful these days.)
