Gah! Debian has update-rc.d for such things, also exim and inetd are the
only services Debian will put in /etc/init.d/ by default, disabling them
is easy, you are asked if you even want to run an MTA , and whether to
listen as part of the installation. Editing /etc/inetd.conf is easy :)
Anyway, man update-rc.d , how to remove the links:
update-rc.d <servicename> remove
