hmm... three onboard NICs.

all on the same bus? all 100MBit? all full-duplex?

you might be hitting bus and/or interrupt contention.

if so, (esp if interrupt contention) you could try the NAPI driver 
architecture, which switches to polled io under high load (iirc).
