XMMS plays MP3, Ogg Vorbis and lots else.
cdparanoia rips sound from CDs (console), while LAME encodes MP3s.
Grip plays CDs, rips and encodes with your encoder of choice (which should
be either LAME or Ogg Vorbis' encoder these days ;).
