It turns out RedHat 7.2 ships with a 3.2 version of rp-pppoe, which does
not include the illustrious adsl-setup script.  However, downloading the
3.3 version from www.roaringpenguin.com/pppoe did the trick.  I updated
with that RPM package, ran adsl-setup answering its few questions
(including giving it eircom's DNS servers, though I suspect I didn't need
to do that), and then did adsl-start.  Bang, it worked like a dream.

Thanks for the tips, and Justin for citing adsl-setup specifically. :)
