Both QMail and Postfix are easy to configure and will handle
substantial loads even on modest hardware. As will Exim.
I use Postfix; I've found it to be the best all-round MTA solution;
it's easy to set up, is very flexible, and uses standard configuration
syntax in its files. I have it handling hundreds of thousands of
messages per day.
Many people swear by QMail. It's as reliable and secure as postfix,
but it's a bit of an oddball system; it uses a configuration mechanism
which is Just Plain Weird, and its a bit of a bastard to get working
with Other People's Programs.
Postfix gets my vote.
