The aforementioned X Terminal option might not be a bad thing to
consider; a sufficiently big-ass server with nice shiny dumb desktops.
Or a hybrid, perhaps, where some amount of work is done locally but big
stuff ends up sitting on the server.
Jamie Zawinski did some doco on building a kiosk-type machine, which
runs a desktop and boots (using BOOTP, essentially) from a server. While
it's not exactly what you're looking for, it does cover a pretty basic
RedHat install that gives you a working desktop. Check the software
section of http://www.jwz.org/, or have a look at http://www.dnalounge.com/
