First of all there's a difference between stateful firewalling and
stateful inspection.  In stateful firewalling the state of TCP/IP
traffic is kept to aid dynamic rule generation and keeping track of
connections in stateless protocols such as UDP or ICMP.

Stateful inspection on the other hand involves your firewall not only
keeping state of these connections but also verifying the data in the
application layer
