Hum.
I'm already doing something similar, any messages which have naughty
(ie: executable) attachments stripped by Sanitizer are stopped by
Mailman before they get to the list (I hope you will have noticed that
no defanged viruses are now making it to the list). The only exception
is text/html, which is stripped by Mailman itself, not Sanitizer.
Unfortunately, Mailman doesn't seem to have an option to indicate its
stripping actions in the headers. I *could* block or bounce any
messages with HTML parts, but that would lead to many legitimate
messages being blocked.

I don't block PGP signatures, unless you're using either some weird-ass
MIME type or an unusual name for the attachment. Try again?
