Seconded.
Personally, I would use tar to create a backup of say /home & /etc some
of /var and do a fresh install on the new HDD.
Then untar whatever is required to the new HDD and away you go. Simple
and quick. I did this when I couldn't decide which "server" my webmail
would run on. I had literally seconds of downtime, and naturally lost no
mail because of good ol mxbackup.
