There's no fundamental difference for example from doing it on Windows 
with Openoffice.org
etc. The only stumbling block that I was aware of was the lack of an 
open Access alike, and probably
some books on using StarWriter for the word processing module etc..

Anyway, it has been discussed here before, and probably on education@ too
