/etc/aliases on mail.example.com:
foo: "| /usr/sbin/sendmail -oi user at foo.com"
that results in an envelope-sender of "nobody at example.com", though, I
think -- which may not be what you want. Not sure if you can specify an
override env-sender on the sendmail command line, but a 5-line perl script
could definitely do it ;)
