Well, I am a huge gentoo fan, but I would _not_ use it as a webserver.
It makes a superb desktop distro though.
Why not? Because every time you need to patch an app / service etc for
security reasons, you have to compile em again.
And if it borks, you in trouble. init?
For this reason, RPM/Deb based distros are better for maintenance. (IMHO)
