rpm -qa | grep gnome

rpm -e all_those_gnome_apps

Then install the original RH 8.0 versions.

If you do manage to do a clean uninstall you could try getting
http://www.gnome.org/~jdub/garnome/ Garnome, aka bleeding edge Gnome, 
might be worth a test, since your Gnome desktop is nuked anyway.
