I did this course about 1.5 years ago, it's fairly short (6-9 months?)
so no great depth is expected. LPI level 1, and level 2 for people with 
more experience. Whether this is still the case I don't know.

A desktop can be is nice to see the whole system including the eye candy
before getting into the small detail.

Considering the length of the course you must ask what an employer
expects from the students and from this determine what distro. is 
suitable. I think in this case width is more important than depth.
A little bit of everything rather than a whole load of nothing.
