Never one to miss an opportunity to plug my blog, I covered this topic a 
while back, take a look here:

I was going to use a script but instead we're using Backuppc which does 
the nice hard-linking stuff, and has also has a *great* web based GUI! 
It currently backs up every 3 or 4 hours outside office hours, and keeps 
about 7 days of incremental backups.
