OSS = Open Sound System = The old linux sound card driver architecture
ALSA = Advanced Linux Sound Architecture = The new linux sound card driver
architecture.
OSS and ALSA go between the hardware and applications. E Sound Daemon, is a
sound server that various applications can play sound through. afaik, the
reason for it's existance is to multiplex sound from different applications
when such an operation is not supported in hardware. i dont use it myself.
mplayer is an application. it is for playing movies, but can also play music,
but for the latter, xmms would be a better choice. 
to see what application is using the soundcard, do `lsof | grep dsp`. if it's
esd, then thats why other stuff isn't working.
