modprobe uses /etc/modules.conf for option information, so:

echo 'options ehci_hcd log2_irq_thresh=4' >> /etc/modules.conf

is all you need to do.

Stewie gave you the relevant pointers for you to solve your problem. 
Above spells it out even further.

GRUB can't solve your problem.
