Sure. Details are good, but not necessary in this case.

Evolution stores everything (accounts, mails, addressbook, signatures 
etc.)  in the folder ~/.evolution (that is .evolution in your homedir). 
Usually most applications do that in Linux, so take a backup of your 
homedir and you have a backup of nearly all personalized software.
