I have a server at work that is running four virtual servers three of 
them NT4.0 I'm afraid to say and one CentOS 4.1.
Two were file servers that replaced two physical machines that had 
hardware failures and rather than re-map login scripts etc it was easier 
to just setup a virtual server and restore the data to that. A couple of 
hours downtime was all that was needed for normal service to be resumed.
One is running a specific application and to be honest even with all 
four in constant use I have barely seen the CPU usage go beyond 25%

Not only that, as I had no choice but to use NT4, a vritual machine was 
the perfect solution since the NT4.0 isn't a supported operating system 
on the new hardware. So it is a nice solution if you need to run some 
legacy servers.
