I've set up a fair few for internal use in a few places. Mostly, I've used
the jive messenger implementation, it's GPL and allows for LDAP
authentication, which is handy if most of the existing clients authenticate
against windows servers. Most configuration can be done through a web
interface too.

That's an interesting idea. There's no irish server listed here
