I know some folks who do a School of Computer Technology
(www.sct-ireland.com) in Sandycove who do courses for this sort of
thing.  Their technical ability and understanding is certainly strong
enough to help you out I think.  They've got some effective 3-day
courses on Linux admin (filesystems, users, printers, backups,
customizing X, firewalls, etc), and 2-day courses about Linux servers
covering configuration of stuff like NIS, NFS, Samba, Apache, DNS, DHCP,
FTP, SSH, xinetd, and doing security via tcp wrappers, IP tables, and
PAM.  (They're €580 and €390, or €880 for both.)

They also do a a 5-day course (or 12 evenings) for passing the LPI
(Linux Professional Institute) exams including mock exams and brain
dumps of the exam.  It costs €880 (day) or €680 (night).
