I did a similar change to let me get at my kmail folders via an ssh 
tunnel when I'm not at home.  I set up courier-imapd instead of dovecot 
(which was having issues with the famd on my SuSE host).  It worked well 
without any special tweaks to the Maildir I was using; I used a perl 
script 'mb2md' to convert my til-then mbox format stuff into Maildir; 
I'm guessing it comes somewhere in the courier* packages, but google 
will be your friend if it doesn't.  (I first tried cyrus-imapd, then 
dovecot, and finally landed on courier-imapd.)

Feel free to write if you need me to dig up anything more detailed about 
how I've got this going,
