Thanks to those who replied.
FWIIW; I finally RTFM'd Firestarter and it works very nicely - I just
had to right-click rather than left-click.... :-)
I was quickly able to "block everything" by default and enable ssh, http
and smtp.
I also enabled smb (samba) so my students can access read-only "NT-shares".
I understand that smb is prob the riskiest?
