Try https://help.ubuntu.com/community/BinaryDriverHowto/ATI , once setup 
you should be able to change resolutions fine.
Great thing about the ubuntu is theres lots of 
documentation/howtos/handholding centralised on their own site and 
others like www.ubuntuguide.org to handle all the typical questions, 
great for the new users :)
