Whereabouts in Ireland will you be?  It's not a huge country, but it's not
tiny either.  And what are you most interested in?

Off the top of my head...  I'd try to get to see:

In Dublin:
Trinity College / Long Library / Book of Kells
Guinness Storehouse
Old Jameson Distillery
Christchurch and St Patrick's Cathedrals
Dublin Castle
Farmleigh
Chester Beatty Library
National Museum
Phoenix Park

East:
Boyne Valley sites (Newgrange / Knowth)

West:
Galway city /  Spanish Arch area / pub nightlife
Aran Islands / Inis Mór / Dun Aengusa
Cliffs of Moher
Ashford Castle

North:
Giant's Causeway
Bushmills Distillery

South:
Cork City (at least for anthropological reasons)
West Cork and Kerry : Dingle / Clonakilty / Schull
King John's Castle

There are plenty of good Irish tourism sites - start with the official
government tourist site at www.ireland.ie.  A Google search also will throw
up lots of good results.
