You need to grab the correct version of package you want for evolution
then use dpkg straight by doing : dpkg -i package.deb
Now keep in mind that next time you update your system (like it does
by itself), it will upgrade that package too unless you hold it (which
I wouldn't really recommend doing).
Consider filing a bug using their proprietary launchpad.net interface
though, might be worth trying, they tend to be really quick on fixing
stuff in the weeks preceding new releases.
