Hi Jason,
faac can encode AAC into an m4a container. Your distro will probably
have a package for it but you'll find sources at:
http://www.audiocoding.com/
faac supports STDIN/STDOUT so you should be able to replace the lame
part of your pipe with a similar faac command.
