Is it squirrelmail, or courier doing this? There is a parameter in the
courier IMAP config file (/etc/courier/imapd on my system) called
DEFDOMAIN which should be commented out in your case.

I think this is only used for outgoing messages - at least that's the way
I read the comments.

Hmmm .. perhaps the above does not apply then, unless dovecot imap has a
setting for a default domain as well.
