I use FC7 as a server, CentOS as a Firewall and Ubuntu native on a 
laptop and on several VM  via XP hosts.
You can install an alien RPM thingy to install rpm'ed downloads on Ubuntu.
I have some Ubuntu with Gnome and some with KDE
