Hi Conor :)

I believe Padraig (pixelbeat) will be able to answer this one better
than me, I have been quite reluctant to get my systems around proper
UTF-8 compliancy. That said, I had to migrate a full data naming
scheme for my mother. Being a gentoo nut, i'd suggest some light
reading : http://gentoo-wiki.com/HOWTO_Make_your_system_use_unicode/utf-8
and that one, not half bad either :
http://www.gentoo.org/doc/en/utf-8.xml

That should point you in the right direction.
