Jabber + JWchat spring to mind, as does php:irc and cgi:irc.
Then again there are loads of chat scripts that don't use/need a server at
all ( besides a web/db server ).
Depends on (a) how professional you want to be, and (b) if you want standard
clients to be able to connect.
