Ok, as I'm doing this on Fedora for a while thought I'd chip in.
>If I send email from helen to tim at alfred
>it finishes up in /var/spool/mail/tim on helen.
>If I send it to tim at alfred.gayleard.com (my local domain)

Edit /etc/aliases on "Helen"
scroll to end of aliases until you get to
# Person who should get root's mail
#root: marc
Uncomment root change marc to: tim at alfred.gayleard.com
Save changes, then from a cli as su, enter /usr/sbin/newaliases - press enter (this update it with changes made to aliases)
>I'm running Centos-5.1 on helen,
>and haven't done anything to /etc/mail/sendmail.mc except add
>define(`SMART_HOST', `smtp.eircom.net')dnl
On "helen" add to hosts file
Alfred ip alfred.gayleard.com (so your mail won't waste it's time searhing the www for alfred)
>I'm running an IMAP/dovecot server on alfred,

It may, if you only have a small number of boxes.
"I'm open to correction on the above but it works for me."
