Never mind, I figured it out thanks to
http://www.quicktweaks.com/2008/10/11/install-openoffice-30-final-in-ubuntu/

Step 1: Remove old version of OOo from Ubuntu

* sudo apt-get remove openoffice*.* 

Step 2: Get the new version and unzip it

* wget
http://openofficeorg.secsup.org/stable/3.0.0/OOo_3.0.0_LinuxIntel_install_en-US_deb.tar.gz

* tar -xvzf OOo_3.0.0_LinuxIntel_install_en-US_deb.tar.gz

Step 3: Change directory and install

* cd OOO300_m9_native_packed-1_en-US.9358/DEBS/

* sudo dpkg -i *.deb

Step 4 Add menu entries

cd desktop-integration

sudo dpkg -i *.deb


I think my mistake first time round as to unzip the  package to the
desktop.
