[ILUG] Best processor for xen host ?

Hi Guys,

I'm purchasing a new server to host a number of xen clients and I'm  
having trouble deciding which processor option to pick.

Here's the choices:

Dual core or quad core?
Dual processor or single?
Intel or AMD?
Which model within each range?
Processor speed?

The host will be managing a number of xen instances, which will be  
idle most of the time but should be responsive when used. I don't mind  
putting plenty memory in it so that each instance isn't swapping but  
the processor choice isn't as obvious.

Any advice welcome.
