I fail to see why you'd have any issues. Although I do use a few Xbox360s
(yeah yeah I know it's a M$ product but it's a damn good console) and a few
modified original Xboxes as media centres I do have a MythTV box setup which
works pretty well for me.

I don't have a Sky box to test it with but why should recording from
composite be an issue? As far as I'm aware (although I could be wrong) they
don't have any VideoCrypt technology setup on composite but even if they do
it'd be easy enough to get around with a small filter.
