If I was you I'd tell her to give Songbird a go, the interface is similar to
iTunes and is really simple to use. Give it a go and see what she thinks,
I'm sure you can skin it so that it looks like iTunes even.
To be honest though, it can really be a pain if you install Ubuntu for
someone who isn't really interested in using it. You are effectively signing
yourself up for tech support, whereas someone with an interest will usually
poke around and find the solutions themselves.
I usually don't install push Ubuntu on people, only installing it for them
if they come to me asking about it. It's generally a good policy to follow.
