I've an iPad and I love it. But I'm an Apple fan boi supposedly so that probably isn't the product you wanted to hear about.
For linux based tabs there's nothing much out there at the moment beyond the WeTab which is loosely based of an early MeeGo snap shot, I've not heard much about it. I don't consider Android tablets to be Linux tablets, because they don't have a GNU/Linux runtime. You might feel different about that. If so, then they're still pretty limited in choice atm. The Samsung Galaxy Tab is out now and seems good, it's gotten mixed reviews though and seem pricey. I saw one in person recently and thought the screen was way too small, it looked like an oversized phone. There should be a WiFi only model out in the new year (it's currently WiFi+3G) and supposedly there's a 10" version in the works. A 10" WiFi model would be very interesting.
The HP Slate is shipping in limited numbers with Windows 7 on there. If it's running Windows 7 it'll run Linux ( and webOS is a pretty good GNU/Linux Stack from what i recall). Not sure of after market linux tablet stuff atm. I know Canonical are planning on having a variation of Unity UI for tables in 2011, I'm sure there's details out there. MeeGo should have a stock Tablet UX project in early 2011 too. Asus (or was it Acer) recently released a bunch of new tablets, netbooks and notebooks. Nothing Linux focused iirc, but again, if it'll run windows it'll run Linux.
In the new year I'd expect to see a bunch more Android/Linux and Windows tablets become available. CES will likely be flooded with them. They where all over the place at CES last year (as where eBook readers) but the iPad seemed to shake things up based on the price and performance aspect, the crop that where coming out just couldn't compete. That should be in a better position.
If you're looking at a pre-xmas purchase then your limited to either an iPad or a Samsung Galaxy Tab. Both are roughly the same price. Both have book stores. I know that Android has a version of the Amazon Kindle app, not sure how that scales on the Galaxy Tab UI.
