I didn't get any answers from ILUG but in case anyone looks in future
the following comes from another forum and works nicely:
$doc->appendParagraph(text => "Before \t after");
OR
$doc->extendText($p, $doc->tabStop);
$doc->extendText($p, "after the tab stop");
OR
$doc->appendTabStop($p);
$doc->extendText($p, "after the tab stop");
