I have been using Debian Squeeze on two machines every day for the last
year, its very stable. Debian Squeeze was frozen back in August so you
shouldn't see any major issues developing. Ubuntu is based on Debian
unstable/testing anyway so if you are using testing you are pretty much
as up to date as Ubuntu.
As a rule of thumb for Debian I would use Stable on servers and Testing
on desktops.
