I am not an accountant either - far from it.
When OpenErp starts up, there are loads of config options (related to
accounting amongst others). It is also modular, so setup involves
dropping in the correct modules for your business type.

I presume working with ROS and all the other Irish goodies will involve
writing an appropriate module, if such does not exist already.
At worst, you should be able to commission such functionality from
OpenErp support partners:

None in Ireland unfortunately, but a few in the UK. It would be
interesting to know how ROI for this compares to proprietary
alternatives, and whether someone would take this on under a FOSS banner?
You can control all of this from the admin menu, which you can access
from an admin account. (not the guest account I have given you access to)
Importing a module is easy - download zip file, from admin menu click
"import module" and point to downloaded file.
I will be happy to set you up with an admin account if you want to
explore some more (you will be able to set up an instance from scratch).
