Postfix is easy to set up and will do everything you could possibly want
and probably a lot more. I have looked at Exim in the past but
eventually went with Postfix and have used it for the last ten years for
our works mail server with no issues.

Postfix also has a nice pointy/clicky webmin module.

Another vote for Postfix.

So does postfix. I have done various setups in the last 12 years, all on
postfix, and it can do everything.

Never touched exim so not wishing to start a troll right here :)
