I don't know for sure, but I imagine that it does encrypt
the HTTP method and headers as well.

Go get some caffeine and just think about that for a second.
You send some mail which is encrypted (i.e. only the recipient
can read it), including the To: header.
How is any mail transfer agent supposed to know where to
send it?
