You're talking about stuff in inetd.conf? In all likelihood, you need very
little. Normally, I get rid of everything except telnetd and ftpd if the
machine is on a network which doesn't support ssh. If the other machines on
the network supports ssh, then I often don't run inetd at all, if the
services that the machine provides can be run as daemons themselves.

It's pretty safe to comment stuff out from inetd.conf. What you need to do
is go through everything in it, and get rid of everything except the stuff
that you know you need. Browsing through the man pages is often a good idea
too.
