Actually, in accordance with EU law, any correspondence made using any
officially recognised EU language must be answered in that language. All
officially recognised languages can be used for correspondence in an
official capacity and must be accepted.
Irish is one of these languages.
Hence, you can write a letter to the UK Government in Irish, and they would
have to accept it, and respond in Irish.
